Today I jest rested for the most part. I did get up and around to do some chores around the house. I also cooked some chicken wings and pork ribs. It was real easy. I just seasoned them and slow cooked them in the oven for several hours. They came out with lots of flavor and were very tender. At this time I will continue the diet and see where it takes me. My long term plan is to continue eating zero carb after all is said and done. I guess for me, the only problem I have is being tired more than before the diet. I do have a better outlook on eating and can appreciate portion control, which was my main focus of the diet besides weight loss. Another aspect of it was to get me back on zero carb. If I can at least go 30 days on this diet I will feel that I achieved something. I know it is just a number, but if I can stay zero carb that long I feel that I will have a chance to remain on it for the long haul. Almost 6 pounds down the slow way like most say is the right way. I have so much fat reserves that I am not concerned about the intake of food right now. I drink lots of water to keep me hydrated which is much more important than food. A person can last a long time with little to no food, but water deprivation can be fatal in as little as 3 days. I know that time can vary from person to person and environment. Thats it for now.

5 31 2012 The 5 Bite Diet Day 17
Good day all. My Spirits are great and my Energy level is good.
Just call me Battling Bruno! I am slugging it out and taking ground! Round by round I am advancing and looking for the prize. If I get knocked down I rise again and again. Whatever it takes to make it to the next round. I have to be strong, I have to be victorious. I have no choice.
Things are OK, but they sure as to hell could be better. Hey thats Life. The 5 Bite Diet has taught me some tough lessons. It thought me that for "ME" carbs for the most part are taboo. It is what it is for "ME". I envy those who can limit the amount of carbs they eat and move on. Not the case for "ME". Oh well???

I hope you enjoyed yesterdays menu but in case you missed it, check out DAY 1 OF ONE WEEK RAW AND GLUTEN FREE.
Before we get to todays menu, I want to make sure:
* youve finished dehydrating the raw granola you started yesterday
* youve rinsing the lentil sprouts you started, twice a day
* youre drinking 8 cups of water each day
* youre taking B12, vitamin D and DHA omega 3 supplements
* youre drinking 8 cups of water each day

And, were going to make tomorrows dessert which is my absolute FAVORITE raw dessert - the amazing chia pudding! Most of the time I get lazy and make chia pudding with Vanilla Living Harvest Hemp milk which starts with a ready-made hemp milk that is also wonderful but not nearly as creamy. When you make it with raw cashews and cinnamon, it tastes like a creamy rice pudding with the consistency of tapioca. What could be better than that?
In addition, we will be preparing todays menu:
Breakfast: Anti-aging smoothie with frozen grapes and matcha green tea
Snack: Leftover Waldorf salad (from yesterdays dinner)
Lunch: Raw split pea soup with shredded carrot and a big piece of watermelon or bowl of cherries leftover from yesterday
Dinner: Hearty taco salad

Lets get started!
Raw Chia seed pudding with Cinnamon (Old Favorite, modified)
Raw Vegan, Gluten Free
[makes 4 servings]
1/2 cup raw cashews, soaked for 4 to 6 hours and rinsed
3 pitted, jumbo Medjool dates soaked for 4 to 6 hours in 2 cups of water (reserve soak water)
1/2 cup raw cashews, soaked for 4 to 6 hours and rinsed
3 pitted, jumbo Medjool dates soaked for 4 to 6 hours in 2 cups of water (reserve soak water)
1 teaspoon of vanilla
1/2 teaspoon of cinnamon plus extra for topping
1 packet of stevia (optional for added sweetness)
1/4 cup chia seeds
Place cashews, dates, date soak water, vanilla, cinnamon and stevia in a high speed blender. Blend until smooth and creamy.
In a 1 quart bowl, combine cashew mixture with the chia seeds and stir vigorously with a fork for several minutes.
Let mixture sit for 15 minutes and stir vigorously again until the chia seeds are well blended and no longer clump together.
Once the mixture is well combined and no longer separating, place in the refrigerator for one day.
Dust with more cinnamon and serve.
Per serving: 173.5 calories, 9.1 g fat, 1.3 g saturated fat, 1.8 g omega 3 and 1.7 g omega 6 fatty acids, 0 mg cholesterol, 4.1 g protein, 21.9 g carbohydrate and 5.8 g dietary fiber.

Now for Todays Menu!

[makes 2 servings]
2 cups red or purple grapes, frozen (with or without seeds*)
2 teaspoons powdered matcha green tea
1 tablespoon ground flaxseeds
1 large or 2 small bananas
2 cups cold, filtered water
* A high-speed blender, like a VitaMix, is needed if seeded grapes are used.
The night before, wash grapes and put in the freezer.
In the morning, combine all ingredients in a blender and process until smooth. Serve immediately.
Per serving: 183 calories, 1.5 g fat, 0 g saturated fat, 0.8 g ALA omega 3 and 0.3 g omega 6 fatty acids, 0 mg cholesterol, 2.0 g protein, 43.5 g carbohydrates, and 4.0 g dietary fiber.
Lunch - Split pea soup with shredded carrot (Previously posted, modified)
Raw Vegan, Gluten Free
[makes 2 servings]
2 cups fresh or frozen petite peas (if frozen, thaw before using)
1 cup chopped celery
2 tablespoons chopped onion
2 small cloves garlic
1 tablespoon extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 teaspoon ground cumin
1 cup filtered water
1 teaspoon sea salt, more or less to taste
1 carrot, peeled and shredded
Freshly ground black pepper to taste
Place peas, celery, onion, garlic, oil, lemon juice, cumin, water and salt in a VitaMix or high speed blender and process until smooth.
Place half of the shredded carrot in each of two bowls leaving a few tablespoons for garnish.
Pour half of the blended soup in each bowl. With a spoon, mix the blended soup with the carrot. Top each bowl with the extra carrot and serve.
Per serving: 185.5 calories, 7.0 g fat, 1 g saturated fat, 0 g cholesterol, 6.5 g protein, 22 g carbohydrates and 7.5 g dietary fiber.
And for Dessert!

[makes 2 servings]
For the dressing
1 teaspoon chia seeds
2 tablespoons water
1 tablespoon fresh cilantro, chopped
2 tablespoons freshly squeezed lime juice
1 tablespoon extra virgin olive oil
1/2 teaspoon sea salt
Pinch of cayenne pepper
For the taco meat
2/3 cup raw walnuts
2 teaspoons chili powder
2 teaspoons Bragg liquid aminos
For the salad
1 small head butter or red leaf lettuce, cleaned and torn into bite sized pieces
4 small tomatoes, cut into eighths

Kernels from 1 small ear of fresh corn

To make the dressing, combine chia seeds with water. Set aside until it forms a gel (about an hour). Once it gels, add cilantro, lime juice, olive oil, sea salt and pepper. Set aside.
For the taco meat, put the walnuts, chili powder and liquid aminos in a food processor and briefly process until the mixture resembles taco meat. Do not over process.
Prepare the salad by combining the lettuce, tomatoes, corn and green onion. Dress the salad with the lime chia seed dressing and place on two large plates. Top each salad with half of the avocado slices and half of the taco meat.
Per serving: 474 calories, 39.2 g fat, 4.3 g saturated fat, 0 g cholesterol, 12.6 g protein, 29.2 g carbohydrates, 11.3 g fiber, 4.1 g omega 3 and 16.7 g omega 6 fatty acid.

And for Dessert!
Tonight were going to have a big bowl of fresh blueberries for dessert. These little guys are packed with anthocyanidins which are powerful antioxidants. In fact, blueberries are one of the highest rated foods in their ability to destroy free radicals.
1 cup of blueberries has only 84 calories and provides a whopping 4 grams of dietary fiber. They are a very good source of vitamin C, vitamin K and manganese. They even contain omega 3 and 6 essential fatty acids! |

My Annual New Years Recipe
As many of you know, I always start the year with a black-eyed pea recipe. For many decades, this tradition has brought me lots of luck so I dare not stop now.
This year, Im making enchiladas.
Easy is Good
My son makes the best enchiladas Ive ever eaten. They take hours to make and like most of his gourmet recipes, they are complicated, dirty lots of pots and pans and require far more patience than I have.
My friend also makes excellent enchiladas. One day she told me her secret - Lawrys. OK, I was surprised. Shes half Mexican so I assumed she slaved all day making some family recipe. But I was delighted to know this as I could now make enchiladas without much fuss. I wont say enchiladas made with Lawrys are better than my sons, but they are quite good and I have used this ready-made seasoning mixture in todays recipe. For those of you who love spice, Lawrys is mild so plan on adding some cayenne, jalapeƱo or chili powder to give it more heat.

I Love Hominy
I was introduced to hominy while living in Texas - the same great state where I discovered black-eyed peas. Hominy is corn without its hull and germ. When hominy is ground its called "grits". I love hominy in all forms. When whole, it has a wonderful, chewy texture. It combines well with the black-eyed peas and gives a lovely texture to the meatless enchiladas.

Vegan Cheese
For those of you who are vegan, lactose intolerant or just wanting to avoid dairy because you just watched "Forks over knives" or read Joseph Keons "Whitewash - The disturbing truth about cows milk and your health", you are probably still searching for a cheese substitute. To be perfectly honest, its pretty impossible to replace the taste and texture of real cheese. But lots of people are pretty excited about Daiya, a dairy, lactose and casein free cheese substitute that is also gluten and soy free. I use the Daiya Cheddar Style Shreds in this recipe. If you are not vegan, you can substitute regular cheddar cheese. If you are trying to wean yourself from dairy, use half cheddar and half Daiya.

Black-eyed pea and hominy enchiladas
vegan
[makes 8 enchiladas]
For the sauce
1.6 oz package Lawrys enchilada sauce spices & seasonings
6 ounce can tomato paste
3 cups water
pinch of cayenne, or to taste (optional)
For the enchiladas
1 tablespoon extra virgin olive oil
1 cup chopped onions
2 cloves garlic, minced
15 ounce can black-eyed peas (or 1 3/4 cups cooked), drained
15 ounce can white or yellow hominy, drained
1/2 teaspoon ground cumin
1 cup Daiya cheddar style shreds, divided
8 corn tortillas
Preheat oven to 350 degrees F.
Take out a 9"x13"x2" baking dish.
To make the sauce, mix the Lawrys spices, tomato paste, water and cayenne (optional) in a saucepan and bring to a boil. Lower the heat and simmer, uncovered, for 10 minutes, stirring occasionally.
Make the enchilada sauce first and let it simmer while you prepare the filling. |
In a frypan, heat oil and cook onions for 5 to 8 minutes or until soft. Add garlic and cook another minute.
Add drained black-eyed peas, hominy and cumin and mix thoroughly. Cook until heated throughout.
Add half the cheese and stir until melted.
Stir half the cheese into black-eyed pea mixture. |
Pour 1 cup sauce in the bottom of baking dish.
Coat each tortilla with sauce and place 1/8th black-eyed pea mixture in center of each tortilla.
Roll up the tortilla and place seam down in baking dish.
To make enchilada, place filling in the center of tortilla. |
Roll up placing seams on the bottom of pan. |
Pour remaining sauce over enchiladas and cover with remaining cheese.
Bake uncovered for 20 to 30 minutes or until bubbly.
Bake until bubbly and serve. |
Per enchilada: 248 calories, 5.5 g fat, 1.3 g saturated fat, 0 mg cholesterol, 6.5 g protein, 40.6 g carbohydrates, 6.4 g dietary fiber and 724 mg sodium.

Today was a pretty nice day. I had a nice drop in weight. I had some good rest. I am really used to the small portions. I still try to conserve my energy and I think that is helping. I know everyone is different. This works for me right now. Not much else.

Hi there, Spirits and Energy levels are good.
Wow, some of those recent comments gave me a lot to think of. Yes, that can be dangerous. Hahaha!!! I am so focused on "Will I make it through today" that sometimes I forget that this is just a weight reduction diet and not 5 Bites For LIFE. Yes this is teaching me "Portion Control" but as the diet claims, I will be able to eat anything within my........... my.............. Bite Range? Did I just come up with a new catch phrase? Anyway like I said I will be able to eat anything.
OK that all sounds great, but like I commented I have grown to love meat. Fatty Meat like BEEF RIBS. Ohhh my mouth waters at the thought. Hey I am not kidding. No I am not, not at all. Before Zero Carb I was not a big meat eater. I ate mostly poultry in the form of chicken. I like pork, but I could live without it. I cant see myself ever giving Beef up unless it was doing me some kind of damage. Dont get me wrong. I like bacon, pork sausage and so on.
Someone just had to mention the "E" word. Yes, I have been avoiding that subject. The "E" word? Come on ........ everyone one knows the "E" word. Ya know .... EXERCISE!!! OK so I have lost more than 100 lbs in the past without an ounce of exercise, so what. Look I am no fitness guru, but I know that exercise will make me stronger and as I get older I see the difference in my strength. I cant speak for yall, but for me: I need to get off my lazy "ARSE" and start the workouts.
Dave bought an Elliptical and he has a Soloflex and he is letting them collect dust.
OK, busted. I am lazy, I guess. Alright do I see a promise coming about. Not yes, but: HELL YES!!! Starting, tomorrow I will at least start the Elliptical. There I said it. I will report it in my daily post. I am working on a Soloflex routine at this time. I was going to "Launch" my fitness part of my diet sometime this week, but since I am being put on the "Spot" by C-TX and others I guess I will step it up.HA!

Wow, some of those recent comments gave me a lot to think of. Yes, that can be dangerous. Hahaha!!! I am so focused on "Will I make it through today" that sometimes I forget that this is just a weight reduction diet and not 5 Bites For LIFE. Yes this is teaching me "Portion Control" but as the diet claims, I will be able to eat anything within my........... my.............. Bite Range? Did I just come up with a new catch phrase? Anyway like I said I will be able to eat anything.
OK that all sounds great, but like I commented I have grown to love meat. Fatty Meat like BEEF RIBS. Ohhh my mouth waters at the thought. Hey I am not kidding. No I am not, not at all. Before Zero Carb I was not a big meat eater. I ate mostly poultry in the form of chicken. I like pork, but I could live without it. I cant see myself ever giving Beef up unless it was doing me some kind of damage. Dont get me wrong. I like bacon, pork sausage and so on.
Someone just had to mention the "E" word. Yes, I have been avoiding that subject. The "E" word? Come on ........ everyone one knows the "E" word. Ya know .... EXERCISE!!! OK so I have lost more than 100 lbs in the past without an ounce of exercise, so what. Look I am no fitness guru, but I know that exercise will make me stronger and as I get older I see the difference in my strength. I cant speak for yall, but for me: I need to get off my lazy "ARSE" and start the workouts.
Dave bought an Elliptical and he has a Soloflex and he is letting them collect dust.
OK, busted. I am lazy, I guess. Alright do I see a promise coming about. Not yes, but: HELL YES!!! Starting, tomorrow I will at least start the Elliptical. There I said it. I will report it in my daily post. I am working on a Soloflex routine at this time. I was going to "Launch" my fitness part of my diet sometime this week, but since I am being put on the "Spot" by C-TX and others I guess I will step it up.HA!

5 15 2012 The 5 Bite Diet Day 1
Greetings Friends and Family. My Spirits are in orbit. My Energy levels are very good.
So today is the first day to start my next 5 bite diet challenge. 30 days? Well I am not sure. I have a feeling it will be a bit longer. I dont plan to stop until I reach............... until I reach............. I just dont know.
According to the BMI chart I could go down as low as 122 lbs. That would put me at an optimum of a BMI of 18.5. The good Doc recommends that you get as close to possible to that margin to achieve better health. I will do my own research in that area for supporting documents.
Dave at 122 lbs? I have a hard time imagining that. I really do. Dave in the 150s or maybe the 140s. Not so much a problem. I really dont know. What I do know is that I am very much overweight and I need to get to the next stage in my life. I want to get there by the age of 50 which is not far away at all.
As far as the 5 Bite Diet goes: Well in my uneducated opinion I agree with it, but not 100%. I still do think that it makes a difference on the quality of food that you consume. So again in my little uneducated opinion I feel that grass fed beef is of a higher quality than hormone infested meat and so on. What do I eat. I eat what I can afford. Right now I am at the mercy of the regular old grocery store. That is for now. My sisters have been talking with me about buying a whole grass fed calf and dividing it equally between us. That might just make the difference. Hey it is a start. When? No time soon. Yet there is hope.
Look-It: I dont go blind into anything if I can help it. I look, learn, listen and try to make reason of things. I have an open mind and I will exercise it and try to make sense of what is happening around me. I will try this venture and see what happens.
I did not do as well on my little week of maintenance. I gained 5 lbs which puts my at at starting weight or approximately 190 lbs. I way overate at a birthday party on Saturday and did not do myself any favors on Sunday either. I was not hungry at all. I just overate. No excuses. I will always report the truth no matter how embarrassing it is. If I dont then why waste the time. Yours and mine. I can huddle up with a box of Ding Dongs, a Family size bag of Doritos and wash it all down with some Dr. Pepper. Yum or is that YIKES to the third degree!!!
So how will I format this? I did not like the way I did it before because it was so misaligned. That being said I will stick to that format until I find something better.

2014 The 5 Bite Diet Day 20
This post will catch me up. Tomorrow will be three weeks on this diet. Time has went by very fast. So far 7 lbs lost. The key for me is to slow down a bit and conserve energy. I also noticed that when I sleep properly I lose more weight. Dave told me this in the past when I was on a regular zero carb diet. Right now I am very sleepy and will turn in as soon as I finish this post. Feeling real good and cant wait to see what another day will have in store for me.

5 16 2012 The 5 Bite Diet Day 2
Good day. My Spirits are great. My Energy levels are good.
OK day 2 in progress and feeling great. I have a really good feeling about this, and I will try not to get too ahead of myself. Now if I can just stay healthy during this period things should progress the way it should without outside interference. HA!!!
I just hate obsessing about food. I love to eat. I love the taste of food, the textures, and the smell. I want to think of food as just fuel, but I can’t. How can I when I a somewhat an armature cook/chef or food artesian. Food in my hands is like clay to a sculptor. It’s like canvas to a painter. You get the message.
So that is how it is with me. I don’t regret it one bit other than I have handled or mishandled my food intake for way too long. Choices………….. we all must make choices. Which one is right? Which one is wrong? How do we know? For me I have to experiment. Yes that nasty word that begins with an “E”. Yes, I have fallen on my face at times ………….. OK many times.
That being said I have also have had some success. There were some “doubters” and some “haters” that thought I would fail. They thought I was crazy. Crazy? Hmm ……… I need to think about that one, crazy huh …………. Or do I? HA!!! Anyway I can look them in the face and say guess “WHO” is not at 280 lbs anymore? Yet, they still criticize me on how I have lost the weight. Go figure.
Dave what’s all this jibber jabber? Get on with the results, will ya? Sure why not.
Results thus far:
Day 2 = (2.0) = 02.0 lbs loss current weight: 188 lbs (nice)
Great start, yes? Maybe. Yall all know those first few pounds I usually credit to water weight. So the loss is defiantly good if not great, but I will see where I am at on......... lets say Day 7 or 8 and then my Friends and Family, then we will see what we will see. Ya see? HA!!!
I will make an effort to keep my homemade update chart as "even" as possible. I may have to add a zero here and there to balance it out, but it should be easy to read and reflect what is really happening . So how low can I go? Lets find out together.
I always appreciate encouragement and support. I will work on issues with folks having trouble joining the blog. Just continue to email me as you have in the past. The email for this blog is the same as the other blog. That never changes no matter how many blogs I open or close. I still have a lot of small details to workout. I will get there soon I hope.

2014 The 5 Bite Diet Day 17
Yesterday was a good day. Lots of things going on at work. Lots of changes. It can be stressful at times. My stomach feels back to normal. Yesterday I rested a lot and did not want to get involved in anything but rest. I am feeling back to my old self and ready for what the day has to offer. It has just started to rain right now. We sure needed in these parts. I did get some hunger pangs today. I dont know why. I am able to control them, so I am not concerned about over eating. I will try to rest more today and I will post another post for today tonight.

2014 The 5 Bite Diet Day 21
Today marks 3 weeks on the 5 bite diet. I expected a little better results, but I am happy for the weight loss none the less. I am down a little over 7 1/2 pounds withe only changing my portions of food. I actually have been resting more and I am feeling a lot better overall today. I will give this diet one more week and make a decision if I want to stay on it or go to a regular zero carb diet. I will keep you posted. I have one more days worth of pork rib and chicken wing. I am not sure what I will be preparing for the rest of the week. Thants about it.

I was not feeling real good today. I had a small touch of the runs in the morning. This did not stop my determination to continue with this diet. Later in the day it went away around noon. I really did not feel like eating lunch, but I forced myself to eat. I think it actually helped. By the time I ate dinner my stomach felt much better. I have been drinking a lot of coffee these past few days. I cut back on the coffee and drank more water today. I have no idea if the coffee played a role in anything in particular. I guess I was trying to used the caffeine to help cut the hunger. That being said, things are better now and I will see how things fare this weekend.
